  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 6 ounces semisweet baking chocolate, cut in chunks

Method

  1. Heat the oven to 350°F and line baking sheets with parchment.
  2. Whisk the flour, cocoa, baking soda and salt.
  3. Beat the butter and sugar until fluffy, then beat in the eggs and peppermint.
  4. Mix in the dry ingredients on low until just combined, then stir in the chocolate chunks.
  5. Drop rounded tablespoons 2 inches apart.
  6. Bake 8–10 minutes, until the edges are set but the centers still look soft. Cool 5 minutes on the sheet.
