Grammy's recipe

Her recipe, typed out to cook from: her amounts and her words, with abbreviations spelled out and the steps numbered.

Ingredients

  • 1 package bacon
  • 1 bunch asparagus
  • 1 stick butter
  • ½ cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic salt

Method

  1. Heat the oven to 400°.
  2. Wrap 3 asparagus spears with a slice of bacon, and place the bundles in a greased casserole dish.
  3. Bring the butter, brown sugar, soy sauce and garlic salt to a boil in a saucepan, stirring constantly.
  4. Pour over the bundles and bake 25 minutes.

Modernized

A present-day cookbook version, with missing steps filled in. These are suggestions, not her words.

Ingredients

  • 1 bunch asparagus (about 1 pound), woody ends snapped off
  • 8–10 slices bacon (regular thickness, not thick-cut)
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • ½ teaspoon garlic powder
  • Black pepper

Method

  1. Heat the oven to 400°F. Line a rimmed baking sheet with foil and set a rack on it if you have one.
  2. Bundle 4–5 spears together and wrap each bundle in a slice of bacon, seam side down.
  3. Melt the butter with the brown sugar, soy sauce and garlic powder, stirring until the sugar dissolves.
  4. Brush the glaze over the bundles and grind pepper over them.
  5. Roast 20–25 minutes, until the bacon is crisp and the asparagus tender. Brush with the pan glaze once halfway.

Ideas to play with

Twists and variations to try. Suggestions, not hers.

  • Prosciutto

Wrap single spears in prosciutto and roast 10–12 minutes, like her quick bundle version.

  • Maple

Use maple syrup instead of brown sugar.

  • Balsamic finish

Drizzle with balsamic glaze before serving.

  • Green beans

The same method works with bundles of green beans. Blanch them for 2 minutes first.
