Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 onion, chopped
- 1 clove garlic, minced
- 1 large zucchini, halved and sliced thin
- 1 bay leaf
- 1 cup long-grain white rice
- 2 cups chicken broth
- ½ cup grated Parmesan, plus more to serve
- Salt and pepper
Method
- Heat the oil and butter in a wide pot with a lid. Cook the onion until soft, about 5 minutes. Add the garlic and zucchini and cook until tender, about 5 minutes more. Season with salt and pepper.
- Stir in the rice and bay leaf and toast 1 minute.
- Add the broth and bring to a boil. Cover, turn the heat to low, and cook 18 minutes without lifting the lid.
- Take off the heat and let stand, covered, 5 minutes. Remove the bay leaf.
- Stir in the Parmesan and serve with more on top.
