- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
Method
- Heat the oven to 425°F with a rack in the lower third. Line a baking sheet with parchment.
- Peel the potatoes and cut them into ½-inch wedges. Pat dry.
- Toss with the cornstarch until lightly dusted, then with the oil, salt, pepper and paprika.
- Spread in a single layer with space between. Use two pans if needed, since crowded fries steam.
- Roast 15 minutes, flip, and roast 10–15 minutes more, until crisp at the edges.
- Salt again and serve right away.
