Rice Pudding with Vanilla Bean, Orange + Rum

5 cups whole milk
2/3 cup Aborio rice
1 vanilla bean - split
1/2 cup sugar
2 TSP dark rum
1 tsp grated orange peel
Orange segments

Combine rice + milk in heavy med. saucepan. Scrape
seeds from vanilla bean add with the bean - Bring
milk to a boil. Reduce heat to simmer until rice
is tender, stirring frequently, about 25 min. Mix in
the rum, sugar + orange peel. Discard vanilla bean.
Cook until mixture thickens, 5 to 10 min longer.

Spoon into bowls, cover + refrigerate about 5 hours
Serve with orange segments

Method

  1. Combine the rice and milk in a heavy medium saucepan. Scrape the seeds from the vanilla bean and add them with the bean.
  2. Bring the milk to a boil, then reduce the heat and simmer, stirring frequently, until the rice is tender, about 25 minutes.
  3. Mix in the rum, sugar and orange peel. Discard the vanilla bean.
  4. Cook until the mixture thickens, 5 to 10 minutes longer.
  5. Spoon into bowls, cover, and refrigerate about 5 hours.
  6. Serve with orange segments.

  • Warm and cozy

    Serve it warm right off the stove instead of chilled, with a dusting of cinnamon.

  • No rum

    Leave out the rum, or use ½ teaspoon rum extract, for the kids.

  • Cherry topping

    Top with warm sour cherries or a spoon of cherry preserves instead of oranges.

  • Pistachio and cardamom

    Add 2 crushed cardamom pods with the vanilla and top with chopped pistachios.
