Ingredients

  • 1 cup (2 sticks, 226 g) unsalted butter, at room temperature
  • 1½ cups (300 g) sugar
  • 4 large eggs, at room temperature
  • 1⅓ cups (170 g) all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla

Method

  1. Heat the oven to 325°F. Grease and flour a tube pan or a 9×5-inch loaf pan.
  2. Beat the butter until creamy, then add the sugar and beat 5 minutes, until pale and fluffy. This is what makes it rise.
  3. Add the eggs one at a time, beating well after each.
  4. Mix the flour and salt, and add it on low speed with the vanilla until just combined.
  5. Spread in the pan and bake 50–65 minutes, until golden and a skewer comes out clean.
  6. Cool 15 minutes in the pan, then turn out onto a rack.
